Now that Sam understands better why Greg has Bruce run all the time, it isn't as annoying as before.

Have you ever had a character with a strange quirk that nobody knew about until later in the game?

I once had a kobold psion who had been tampering with some old dream-demon constructs to make armor. Sadly, these armor scraps were still inhabited by said dream-demons, so the kobold literally had voices carrying on conversations in his head. Took the party almost 3 sessions before they realized all the random phrases he was saying were in fact one part of a conversation with John Cleese and Christopher Watkins about the proper way to wield a spatula and intimidate people.

I had a Hengeyokai Enchantress who spent all her time in sparrow form pretending to be the familiar of her cohort. It wasn't until the cohort died that I finally revealed her true nature to the other players.

I'm currently playing a Shifter Scout with only his left arm. He is cursed by the demon lord Asmodeus, so that every time his emotions shift too quickly a vaguely arm-shaped mass of demonic energy with an axe head at the end appears over the stump of his right shoulder and causes him to go berserk. That happened to him recently (to the surprise of everyone else), with repercussions as expected.

One of the PCs in a campaign I'm running (the warpriest) has an artificial leg. I've been gradually giving the characters better stuff, and I'm getting to a point where I'm going to upgrade his leg, so when he met the NPC who was going to do it, I asked him which leg was the artificial one (I couldn't find it in the backstory he sent me). Not only had he never written down which leg it was, no one else in the party had even noticed that he had an artificial leg. Much laughter was had.
